A New Chapter at Hugo's Wood-Fired Kitchen

There are days in the restaurant business that feel bigger than service.

Days that remind you that restaurants aren't just buildings or menus—they're people. They're relationships, shared experiences, and teams who become family over years of working side by side.

Today is one of those days.

Today, we're incredibly proud to welcome the talented front-of-house and back-of-house team from Table 128 to Hugo's Wood-Fired Kitchen, as we begin an exciting new chapter together.

While we're saying goodbye to one incredible restaurant, we're also bringing together years of knowledge, creativity, hospitality, and passion under one roof.

For us, that's something worth celebrating.

This isn't simply about growing our team—it's about bringing together two groups of people who have always shared the same belief: that great food matters, but great hospitality matters even more.

Honoring an Incredible Legacy

For more than a decade, Table 128 became a place where anniversaries were celebrated, business deals were made, birthdays were toasted, and strangers became regulars.

It represented thoughtful hospitality, seasonal cooking, and the kind of dining experience that people remembered long after they left the table.

Closing that chapter wasn't easy.

Over the past few weeks, I've had countless conversations with guests, team members, and friends who have shared what Table 128 meant to them. Those conversations have reminded me that great restaurants leave a mark long after the last service ends.

Restaurants become part of people's lives, and we know many of you have memories that will always include Table 128.

Those memories don't disappear.

While Table 128's story has come to a close, the values that shaped it—thoughtful hospitality, genuine care, and a passion for great food—continue every day through the people who are now part of Hugo's.

Instead of ending, those values become part of the story we're continuing here at Hugo's.

Bringing the Best Together

One of the things that excites me most is knowing that our guests won't just be seeing familiar faces—they'll be experiencing the incredible talent that helped make Table 128 so special.

Servers who understand genuine hospitality.

Cooks who care about every plate leaving the kitchen.

Leaders who believe that every guest deserves an unforgettable experience.

Chef Lynn has always believed that restaurants are about people first, and I think that's why this transition feels so natural. Watching these two teams come together doesn't feel like starting over—it feels like building on an already strong foundation.

I've had the privilege of working alongside both teams, and watching everyone come together over the past few weeks has been one of the most rewarding parts of this entire journey.

The knowledge, creativity, and passion they've developed over the years now become part of every lunch, every dinner, every cocktail, every wood-fired pizza, and every guest experience at Hugo's.

Looking Ahead

If you know me, you know I'm always thinking about what's next.

One of the most exciting parts of this transition has been the conversations happening behind the scenes.

New seasonal menus.

Fresh chef features.

Packaged consumer goods.

Community collaborations.

Cooking classes.

And yes... we've even started dreaming about brunch.

Nothing is official just yet, but with this incredibly talented team together, there are so many possibilities that simply weren't possible before.

That's what excites me the most.

Not just what Hugo's is today—but what it has the opportunity to become.

For the first time in a long time, it feels like we're dreaming a little bigger—and that's an exciting feeling.
